The Parmigiano Reggiano PDO is a universal cheese very used in the Italian cooking. Since 1996, this cheese is protected at the European level by an PDO. It is a semi-fat cheese with pressed and crumbly cow milk dough. Refined during 12 months minimum, it presents a fruity taste and soft flavours. Its unique manufacturing is realized from the evening milking, partially skimmed by natural outcrop of on-surface fats and then mixed into whole milk of the following morning milking. We can taste it of many manners, in pieces as table cheese, grated as an ingredient in recipes of pastas or also as “shaves” on salads and carpaccio.
