Scamorza is a stretched curd cheese made from cow's milk. It is recognized as a traditional Campania, Apulian, Abruzzese, Calabrian agri-food product. The origin of its name could come from "capa mozzata" or "severed head", it has the shape of a flattened sphere and is also produced in the smoked and stuffed version.
